Mofacky'S Freekin Greek Salad
- t head Romaine lettuce chopped fine
- t roma (plum) tomatoes, diced
- t small English cucumber, diced
- t small red onion, diced
- t/4 cup sliced Kalamata olives
- t ounces feta cheese, crumbled
- t cup chick peas cooked and chilled
- t/4 cup olive oil
- t teaspoon red wine or red wine vinegar
- t teaspoon lemon juice
- t clove garlic, minced
- t/2 teaspoon fresh oregano and thyme
- talt and pepper to taste
- 1.thisk together the oil, red wine, lemon juice, garlic, oregano, thyme, salt and pepper. Let sit for 1 hour, occasionally stirring to blend flavors
- 2.tn a salad bowl, combine the tomatoes, cucumber, onion chick peas, and olives.
- 3.tour dressing over salad, add feta cheese and toss before serving.
