Home Style Encheladas
- 1lb hamburger
- 2 cloves garlic minced
- 2 tsp chili powder
- 1 tsp cumin
- 1 cup frozen hash browns
- -OR-
- 1 can sliced new potatoes (broken into bite size pieces)
- 1/2 cup frozen peas
- 1/4 bunch cilantro, chopped
- 1 can chopped green chilies
- 8 10" tortillas shells
- 2 cups shredded cheddar jack cheese
- 1 can enchilada sauce
- sour cream
- Preheat oven to 350*. Spray large casserole dish and enough foil to cover with nonstick cooking spray, set aside. Cook hamburger and garlic until browned. Drain. Add child powder, cumin,potatoes, peas, cilantro, and green chilis to pan, mix well. In the middle of a tortilla sprinkle 1/8 cup of cheese. Spoon on 1/8 of the hamburger mixture. Fold over one side, and then fold over the two ends, finally rolling it up tight. Place in casserole dish, seam side down. Repeat with all remaining tortillas. After all enchiladas are in dish pour enchilada sauce over them evenly. Sprinkle with remaining cheese. Cover with sprayed foil. Bake for 30-35 minutes or until warmed thoroughly. Serve with sour cream.
