Garlic Shrimp With Rice
- 1.5C Rice (I used brown)
- 3C boiling salted water
- 1Tbsp chopped parsley
- 2tsp grated lemon peel
- 1/2 C (1 stick) butter (i used a bit more)
- 4 cloves garlic, crushed
- 1/2 lemon, sliced thin
- 1 tsp crushed dried oregano
- 1 bay leaf
- 10 oz (1 pkg) of frozen chopped spinach - dethaw in microwave a bit
- 1.5 lbs raw shrimp (deveined, take shells off)
- 1) Cook rice in salted water for 20 minutes or until tender and all water is absorbed. Stir in parsley, lemon peel, salt and pepper. Cover and set aside, keep hot.
- 2) In large pan/skillet, combine butter, garlic, lemon slices, oregano, bay leaf, spinach & shrimp. Bring to a boil to melt butter and cook stirring frequently until shrimp turns pink (approx 5 min)
- SERVE OVER RICE!
