Cherry And Almond Glazed Pork Loin
- 3 pound pork loin
- salt and pepper
- 10 oz jar of cherry preserves
- 1/4 c red wine vinegar
- 2 T light corn syrup
- 1/4 t salt
- 1/4 t cinnamon
- 1/4 t nutmeg
- 1/4 t cloves
- 1/4 c toasted slivered almonds
- Preheat oven to 325 degrees.
- 1. Trim excess fat from roast. Lightly rub roast with salt and pepper. Place on rack in shallow roasting pan. Cook 2 1/2 hours.
- 2. In saucepan, combine all remaining items except almonds. Cook and stir to boiling. Reduce heat; simmer 2 minutes. Add almonds; keep warm on very low heat.
- 3. Spoon some of the mixture over the roast to glaze. Continue cooking about 30 minutes, until internal temperature reaches 170 degrees. Baste several times with glaze mixture.
- 4. Remove roast to carving board. Let rest for 15 minutes. Slice and serve.
