Walnut Zucchini Bread
- 1/2 to 1 c. chopped nuts
- 4 eggs or 1 carton Egg Beaters to equal 4 eggs
- 2 c. sugar
- 1 c. plus 1 Tbsp. vegetable oil or applesauce
- 3 1/2 c. unsifted flour
- 1 1/2 tsp. baking soda
- 1 1/2 tsp. salt
- 3/4 tsp. baking powder
- 1 tsp. cinnamon
- 1 c. grated plus 1 c. shredded zucchini
- 1 c. raisins
- 1 tsp. vanilla
- Beat sugar into eggs or Egg Beaters.
- Then beat in oil (or applesauce).
- Combine dry ingredients; add to first mixture.
- As you add the dry ingredients, add it one at a time and add a little bit of zucchini in between each one.
- Stir in raisins, walnuts and vanilla.
- Put into 2 greased and floured loaf pans (9 x 5 x 2 3/4-inch).
- Bake at 350u0b0 for 55 minutes (may take longer in certain ovens).
- Let stand for 10 minutes.
- Remove and let cool. The loaves freeze well.
