Walnut Zucchini Bread

  1. Beat sugar into eggs or Egg Beaters.
  2. Then beat in oil (or applesauce).
  3. Combine dry ingredients; add to first mixture.
  4. As you add the dry ingredients, add it one at a time and add a little bit of zucchini in between each one.
  5. Stir in raisins, walnuts and vanilla.
  6. Put into 2 greased and floured loaf pans (9 x 5 x 2 3/4-inch).
  7. Bake at 350u0b0 for 55 minutes (may take longer in certain ovens).
  8. Let stand for 10 minutes.
  9. Remove and let cool. The loaves freeze well.
