Spinach Quiche Egg Dish
- Eggland's Best(R) Ricotta Spinach Quiche
- Ingredients
- 2 (10 oz) packages frozen chopped spinach
- 1 Tbsp canola oil
- 1 small onion, minced
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1/8 tsp black pepper
- 1 lb part-skim ricotta cheese, part-skim
- 1/4 cup grated Parmesan cheese
- 1 cup low-fat milk
- 4 large Eggland's Best(R) eggs, lightly beaten
- 1 store-bought frozen uncooked 9-inch pie shell
- Instructions
- 1. Microwave spinach according to directions on box. Drain very well, using paper towels, to squeeze out all of the water.
- 2. Preheat oven to 425u0b0F.
- 3. Heat oil in a large skiller over medium-high heat. Saute spinach, salt, nutmeg and pepper until spinach wilts.
- 4. In a large bowl, combine ricotta cheese, Parmesan cheese, milk and eggs; mix well and stir into spinach mixture.
- 5. Pour egg mixture into pie shell. Bake 15 minutes.
- 6. Reduce heat to 325u0b0F and bake an additional 50 minutes until set.
- Serving Size: 1/8 of pie
