Spinach Quiche Egg Dish

  2. 1. Microwave spinach according to directions on box. Drain very well, using paper towels, to squeeze out all of the water.
  3. 2. Preheat oven to 425u0b0F.
  4. 3. Heat oil in a large skiller over medium-high heat. Saute spinach, salt, nutmeg and pepper until spinach wilts.
  5. 4. In a large bowl, combine ricotta cheese, Parmesan cheese, milk and eggs; mix well and stir into spinach mixture.
  6. 5. Pour egg mixture into pie shell. Bake 15 minutes.
  7. 6. Reduce heat to 325u0b0F and bake an additional 50 minutes until set.
  8. Serving Size: 1/8 of pie
