Sara'S Quick Taco Casserole
- 3 Tbsp Peanut oil
- 1 lb Ground chicken
- Mexican seasoning to taste
- Salt to taste
- Pepper to taste
- 1 jar Medium picante sauce
- 1 Diced roasted red pepper - skinned and seeded (optional)
- 1/4 lb Mexican cheese blend
- 1 Tbsp Fresh cilantro
- Fresh cornbread (optional)
- Heat a large oven proof skillet under medium-high heat. After the pan has heated for 2-3 minutes, add the peanut oil and let it come up to temperature. Add the ground chicken to the pan and season with the Mexican seasoning, salt, and pepper. Occasionally stir the chicken to break it up. When the chicken is cooked through, reduce heat the medium low and pour the Picante sauce over it. Mix in the diced pepper if desired. Stir to coat evenly. Cover the top of the chicken with the cheese and place under a broiler for a few seconds to melt it evenly. Top with fresh cilantro. Serve with a wedge of fresh cornbread.
