White Fruit Cake
- 3 c. sugar
- 1/2 lb. butter
- 6 eggs
- 1 lb. coconut
- 1 large can crushed pineapple, drained (save juice)
- 1 pt. maraschino cherries, cut in pieces (leave some whole to decorate loaves before baking)
- 1 lb. shelled walnuts, broken in pieces
- 1 lb. shelled pecans, broken in pieces
- 4 c. flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 Tbsp. vanilla
- 2 Tbsp. almond extract
- 3/4 c. pineapple juice
- 2 to 3 jiggers rum
- Cream sugar, eggs and butter well.
- Mix until light and fluffy.
- Add pineapple and cherries.
- Add flour, baking powder and salt.
- Add nuts, flavorings, coconut and pineapple juice.
- Mix well.
- Bake at 275u0b0 in 2 to 3 loaf pans for 1 1/2 hours or until toothpick comes out clean.
- Cool well.
- Store to develop flavor.
