Sweet Potato Fries

  1. Preheat over to 425.
  2. Slice the potato in half crosswise, and then into 1/4 inch strips. Toss any pieces that are too skinny. Spread out the strips on a microwave safe plate and microwave for 2 minutes, moving them around a few times. (If doubling--or more!--the recipe, do in batches of one potato at a time) Let the strips cool.
  3. Mix the spices together in a small bowl. Place the strips in a medium bowl, and toss them with oil to just coat (not too much or they'll be soggy!). Add the spices liberally and toss.
  4. Line a baking sheet with parchment paper. Spread the strips out evenly on the sheet. Bake the potatoes for 20 minutes or until crispy. Turn them once halfway through. Keep an eye out so they don't burn! Once they're almost done, they'll brown up very quickly. Let them cool on the baking sheet 5 minutes.
  5. Serve with Honey Mustard. Enjoy!
