Tomato & Cabbage Soup W/Ham
- 1 T Canola oil
- 1/2 Vidalia onion, chopped
- 1 stalk celery, chopped
- 1/2 green bell pepper, seeded, chopped
- 2 cloves garlic, finely chopped
- 1/2 lb lean ham, cooked, diced
- 1 can diced tomatoes
- 2 c tomato juice
- 4 c water
- 2 c cabbage, cut into 11/2 to 2 inch pcs
- 1 c beans, drained, rinsed (any variety works well)
- 3/4 t salt
- 1/2 t black pepper
- 1/4 t cayenne pepper
- In a Dutch Oven or Stock Pot, saute onion, celery, bell pepper and garlic in Canola oil until onions are translucent, and celery, bell pepper is tender. Add diced ham and remaining ingredients to pot. Bring to a boil on med-high heat, then reduce heat and simmer for 30 mins, stirring occasionally.
