Chocolate Cracked Cookies
- 24 oz semi-sweet baking chocolate
- 1 1/2 cups flour
- 4 tsp cinnamon
- 2 tsp chile pepper
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup (1 stick) butter, softened
- 1 cup sugar
- 1/2 cup brown sugar, packed
- 4 eggs, lightly beaten
- 4 tsp vanilla
- 1. Melt 20 oz chocolate according to package directions.
- 2. Coarsely chop remaining 4 oz chocolate.
- 3. Mix flour, cinnamon, chile pepper, baking powder and salt in small bowl.
- 4. Beat butter and sugars in large bowl on medium speed until light & fluffy.
- 5. Add eggs and vanilla, mix well.
- 6. Add melted chocolate, beat until well blended.
- 7. Gradually beat in flour mixture on low speed until well mixed.
- 8. Stir in chopped chocolate.
- 9. Drop by generous rounded tablespoons 1.5" apart on parchment paper lined baking sheets.
- 10. Bake in preheated 375 F oven about 10 mins. Transfer to wire rack, cool.
