CarolS Cheesy Chicken
- 4 skinless chicken breasts
- 1 medium onion, sliced thick
- 1 stick butter, or substitute
- 2 cups Cheez-It crackers
- 11/2 cups mayonnaise
- 1 Tbs. Worcestershire sauce
- 1 Tbs. garlic powder or minced
- 1 Tbs. onion powder
- Set oven to 325u0b0 -- 400u0b0 depending on what else is cooking.
- Put pan in oven with onions and butter and let onions saute while you prepare the chicken.
- Crush cheese crackers in Ziploc bag until they resemble a coarse powder.
- Mix mayonnaise with Worcestershire sauce, garlic and onion powder.
- Slather mayo mixture on skinless chicken breasts, covering all surfaces.
- Gently toss chicken pieces one at a time in cheese coating. Pat extra coating on bald spots. Discard leftover coating and mayo mixture.
- Place chicken pieces breast side up in pan covering onions to keep them from drying out, drizzle with a little butter, and sprinkle with salt and pepper.
- Bake for about an hour, drizzling with butter every 15 minutes or so.
- Side Dishes
- I usually serve this with fresh green beans, steamed al dente with slivered almonds added near end of cooking to retain their crunch. Top with fresh ground pepper and fine sea salt, to taste.
- It's also great with fresh salad, the crunchier the better!
