Clambake In A Pot
- 1 lb kielbasa (smoked) cut into 1/2 inch pieces
- 2 ears corn each cut into 4 pieces
- 1 lb unshelled shrimp
- 3 1/2 lbs littleneck clams
- 2 Tbsp toasted coriander seeds
- 1 Tbsp toasted cumin seeds
- 1 Tbsp kosher salt
- 1 med onion thinly sliced
- 1 head garlic cloves thinly sliced
- 2 Fresno chilies thinly sliced into rings
- 1 bay leaf
- 1 lemon cut in thirds
- 1 bottle dry white wine
- 1 cup cilantro leaves
- In a large pot with a lid, add food in layers:
- sausage first, then clams, shrimp.
- Distribute rest except for wine and cilantro.
- Pour in wine and cover and cook til clams open--about 20-25 minutes.
- Sprinkle with cilantro at end.
