Brown Butter Oatmeal Chocolate Chip Cookies
- 1 cup butter
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 T vanilla
- 2 1/4 cups flour
- 1/2 t baking powder
- 1 t baking soda
- 1 t salt
- 2 1/4 cups oatmeal
- 2 cups chocolate chips
- 1 cup toasted pecans, coarsely chopped
- Preheat oven to 375 degrees F
- Melt butter over medium high heat and continue to cook, whisking often, until butter is browned and fragrant. Watch carefully to avoid burning. Cool completely. Butter should be cloudy and thick before continuing.
- In bowl of electric mixer, combine brown butter and both sugars. Add eggs and vanilla and mix until combined.
- In separate bowl, stir together flour, baking powder, baking soda and salt. Add to butter mixture and stir until combined. Stir in oatmeal followed by chocolate chips and pecans.
- Drop tablespoon size amounts on ungreased cookie sheet 2 inches apart.
- Bake 9-12 minutes. Transfer cookies to wire rack to cool.
