Veal Parmagiana
- 6 Veal steaks sliced thinly;
- 1 tsp sea salt;
- 1 tsp ground black pepper;
- 2 eggs, whisked lightly together with 1 TBS water;
- 1/3 cup fresh grated Parmesan cheese;
- 1/2 dry bread crumbs seasoned with Italian herbs;
- 1/4 cup oil or shortening;
- 1 large onion chopped finely (about 1/2 cup);
- 1/2 tsp basil;
- 1/2 tsp marjoram;
- 1 cup fresh mozzarella cheese.
- Spicy Tomato Sauce:
- 1/2 cup tomato puree;
- 2 TBS tomato paste;
- 1 can crushed roma tomatoes;
- 1 heaped tsp cajun spice;
- 1 heaped tsp hot paprika;
- 1 heaped tsp chilli powder;
- 1 finely chopped onion (red);
- 1 finely chopped red chilli;
- 1 TBS honey or maple syrup.
