Pork Tofu
- 1 lb. thinly sliced pork
- 1 block firm tofu, cubed
- 1 (10 oz.) pkg. chop suey vegetables
- 1 medium onion, sliced
- 6 green onions, cut into 1-inch pieces
- 2 cans (4 oz.) whole mushrooms, drained
- 1 Tbsp. minced ginger root
- 1/2 c. soy sauce
- 1/4 c. water
- 2 Tbsp. sugar
- 2 Tbsp. oyster sauce
- 2 Tbsp. mirin
- 1 Tbsp. salad oil
- 1/4 tsp. MSG (optional)
- Place pork in a 3-quart microwave baking dish.
- Cover and microwave on High power for 3 minutes.
- Stir well, cover and microwave 3 more minutes or until pork is cooked.
- Place tofu, chop suey vegetables, onions, mushrooms and ginger on pork.
- In a small bowl, combine remaining ingredients and pour over tofu mixture.
- Cover and microwave on High power for 6 more minutes. Makes 4 to 6 servings.
