Scalloped Chicken And Potatoes Dinner(Serves 6 People)
- 8 medium red potatoes, sliced 1/4-inch thick
- 1 can chicken broth
- 1/2 tsp. dried thyme powder
- salt and pepper
- 1 tsp. chicken bouillon
- 1 1/2 lb. boneless skinless chicken breasts, cut into 3/4 cubes
- 1 (10 oz.) pkg. frozen green beans
- 1 1/2 c. shredded cheese
- 1 medium chopped red onion
- 1 medium chopped green pepper
- 1 (4 1/2 oz.) jar sliced mushrooms, drained or fresh mushrooms
- 3 Tbsp. butter
- 12 eggs
- 3/4 c. half and half cream
- 1/4 tsp. pepper
- 1 1/2 c. shredded Cheddar cheese
- 1 Tbsp. minced chives
- Saute onion, green pepper and mushrooms in butter until crisp-tender.
- Beat eggs, cream and pepper; add to skillet.
- Cook over medium heat until eggs are almost set, stirring occasionally. Sprinkle with cheese and chives.
- Cover and cook until eggs are completely set and cheese is melted.
