Caribbean Kabobs (Side For Jerk Chicken)
- 3 Bell Peppers (green, red, yellow)
- 1 Sweet Onion
- 6 Pinapple Chunks
- 2 tablespoons Olive Oil
- 2 tablespoons Soy Sauce
- 1 teaspoon Brown Sugar
- 1 teaspoon Dijon Mustard
- 2 tablespoons Citrus Juice (such as pinapple, lemon, orange or lime)
- 5 Fresh Basil (4-5 leaves)
- Cut bell peppers, pinapple, and onions into similar size pieces. Thread onto skewers, then put inside a large ziplock or baking dish.
- Combine the rest of ingredients in a bowl.
- Dump marinade over kabobs and massage or baste every so often. Let marinade for at least 2-5 hours or overnight.
- Grill kabobs using the marinade as a baste for the first half of cooking time. Discard the rest.
