Chocolate Brownie Cookies
- 3 oz. unsweetened chocolate
- 6 oz. semisweet chocolate
- 3 tbsp. butter
- 1/3 cup all-purpose flour
- 1/4 teaspoons baking powder
- pinch salt
- 3/4 cup granulated sugar
- 1 1/2 tsp strong coffee
- 3 large eggs
- 1/2 teaspoons vanilla
- 6 ozs semisweet chocolate chips
- Put oven rack in middle position and preheat oven to 300u0b0F. Line a large baking sheets with parchment or wax paper.
- In microwave or double boiler, melt the chocolates and butter.
- Mix together flour, baking powder and salt in a small bowl.
- Beat together eggs,sugar, coffee and vanilla in a large bowl with an electric mixer at high speed until triple in volumne.
- Add melted chocolate and butter.
- Reduce speed to low and mix in flour mixture until just blended, then stir in chips.
- Drop a tbsp of dough onto baking sheets.
- Bake for about 7 minutes or until the tops of the cookies appear cracked.
- Place the baking sheet on a rack to cool.
