Bread Pudding With Caramel Sauce
- 2 loaves white cubed bread (dried over a few days is best)
- cinnamon
- 2 qt. heavy cream
- 2 c. sugar
- 6 eggs
- 1/4 c. vanilla
- caramel sauce (see below)
- Lay bread in a baking pan and sprinkle with cinnamon.
- Cook the heavy cream and sugar until it comes to a boil and then turn it off. Let it rest while you gently fold the eggs and vanilla together.
- Add eggs and vanilla to cream and sugar a little bit at a time, stirring constantly.
- Once all the egg mixture has been added, pour over the dried bread. Once it cools enough to touch, fold through the bread until evenly mixed.
- Bake covered for 20 minutes at 350, and then another 15 minutes at 250.
- To prepare caramel sauce:
- Bring 2 qt. heavy cream, 2 pkg. brown sugar, and 1# butter to a boil, rest, then drizzle over pudding.
