Vegan Gingerbread
- 2 1/4 cups hot water
- 1 tablespoon + 1 1/2 teaspoons baking soda
- 7.5 cups flour
- 2 1/4 teaspoons baking powder
- 1 1/2 teaspoons cinnamon
- 1 teaspoon cloves, ground
- 1 tablespoon ground ginger
- 1 1/2 teaspoons ground white pepper
- 3/4 teaspoon coriander
- 1 Tbsp salt
- 2 1/4 cups sugar
- 4.5 oz candied ginger, chopped
- zest of 2 large oranges
- 1 cup + 2 tablespoons applesauce
- 2 1/4 cups canola oil
- 2 1/4 cups molasses
- 1/4 cup ginger juice
- Combine hot water and baking soda. Set aside.
- Sift together dry ingredients and set aside.
- In the mixer using the wisk attachment, incorporate the sugar with the candied ginger and zest. Add the liquids with the mixer running on speed one. Then add the soda and water mixture.
- Add the dry ingredients last. Be sure to scrape the bowl and allow to mix on speed two for a minute. Pour into hotel pans, lined with parchment paper. Bake @ 350o until dry toothpick, about 45 minutes. Cool completely. Cut into 3x5 squares.
