Spicy Meat Loaf Americana

  1. About 2 hours before serving, in 10-inch skillet over medium-high heat, in hot salad oil, cook onion, pepper, celery and garlic until vegetables are tender and lightly browned, stirring occasionally.
  2. Remove 2 tablespoons vegetable mixture; reserve for garnish.
  3. Into vegetables remaining in skillet, stir nutmeg and 1 1/2 teaspoons salt.
  4. Cook 1 minute.
  5. Remove skillet from heat.
