Good-For-You Mexican Chicken Salad
- Salad:
- 2 hearts romaine, torn
- 1 tomato, diced
- 3/4 c. corn
- 2 green onions, diced
- 6 mini-peppers, or 1 red or orange bell pepper, sliced
- 2 tbsp cilantro, chopped
- 1/2 bag pre-cooked chicken breast strips, or 2 c. cooked chicken
- Dressing:
- 1/2 firm-ripe California avocado, quartered, pitted, and peeled
- 1/2 c. fat-free yogurt
- 2-3 tbsp fresh lime juice
- 1 garlic clove, finely chopped
- 3/4 teaspoons salt
- 1/4 teaspoon black pepper
- Combine all salad ingredients. Blend all dressing ingredients and add 1 tbsp (or more) water to reach desired consistency. Enjoy guilt-free!
