Grilled Salmon With Citrus Salsa
- For the salsa:
- 1 navel orange, 1 lemon and 1 lime each peeled and cut into segments
- 2 Roma tomatoes, diced
- 1/2 Red Bell pepper
- 2 cloves of garlic, minced
- 1/4 red onion, diced
- 1 jalapeno pepper, minced
- 1/4 cup cilantro, chopped
- Kosher salt and fresh ground pepper
- Salmon:
- 6 salmon steaks
- 4 tablespoons olive oil
- Kosher salt and pepper to taste
- 1 tablespoon of butter
- Combine ingredients for salsa in a bowl and refrigerate for 2 hours
- Season salmon steaks and prepare with olive oil in hot ribbed grill pan for 3 minutes on each side, finish in 300 degree oven for 3 minutes - combine remaining bits in grill pan with 1 tablespoon of butter and pour over salmon just before serving
- Serve with citrus salsa - serves 4
