Mexican Casserole(Serves 6 To 8)
- 1 lb. ground beef
- 1 celery rib, chopped
- 1 medium onion, chopped
- 1 (1 1/4 oz.) pkg. taco seasoning mix
- 1/4 c. water
- 2 (15 to 16 oz. each) cans refried beans
- 1 (4 oz.) can chopped green chilies (optional)
- 1 c. (4 oz.) shredded Cheddar cheese
- 2 green onions, sliced
- 1 large tomato, chopped
- 1/3 c. pitted ripe olives, chopped
- 1 1/2 c. crushed tortilla chips
- In a large skillet, cook beef, celery and onion until meat is browned; drain.
- Stir in taco mix, water, beans and green chilies if desired; mix well.
- Pour into a 2 1/2-quart baking dish.
- Bake, uncovered, at 350u0b0 for 30 minutes or until heated through.
- Top with cheese, green onions, tomatoes, olives and chips.
