Grilled Chicken With Cilantro Lime Butter
- 2T unsalted butter softened
- 11/2t finely chopped fresh cilantro
- 1/2t finely grated lime zest
- 1/4t green tabasco or other hot sauce
- 2 large boneless skinless chicken breast
- 2T fresh lime juice
- 1T extra virgin olive oil
- In a small bowl mash the butter chopped cilantro lime zest, tabasco and 1/4t kosher salt with a wooden spoon or rubber spatula to form a smooth butter. Scrape onto a piece of plastic and roll and twist the plastic to shape the butter into a short log. Refrigerate until firm enough to slice 20 to 25 mins
- To prepare chicken breasts, cut through each one horizontally almost all the way through and then open it like a book. Put them on a plate. Season with 3/4 t salt and drizzle with the lime juice and olive oil. Let the chicken sit for 15 mins. Grill chicken until done. Slice the chilled butter thin and arrange the butter slices on the chicken and then serve
