Lavish Latkes

  1. Peel potatoes and onion. (If not using immediately, place in cold water.) Grate with the shredding blade of food processor.
  2. Put grated potatoes in a large strainer and press out liquid. Pour cold water over the potatoes and press out liquid once more. Transfer to large mixing bowl.
  3. Add onions, leeks, and feta cheese.
  4. Beat eggs and add to potatoes and onions. Add flour, matzo meal, baking powder, and seasonings. Mix well, best mixed by a pair of clean hands
  5. Heat oil in frying pan, making sure oils is very hot.
  6. Form oval shapes with a large soup spoon (About 2" length) When ready, one by one drop batter by spoonfuls to form oval shapes, do not over crowd pan) Fry over moderate to high heat until brown on one side; turn to brown other side. Remove from frying pan and drain on paper towels. Repeat until all batches are cooked. If making ahead, cover in fridge and reheat in oven at 350 degrees for about twenty minutes or until warmed through.
  7. Serve with sour cream or applesauce.
