Cranberry Relish & Whipped Candied Sweet Potatoes
- RELISH: 16 oz fresh cranberries, rinsed - 2 cups sugar - 1/2 cup cranberry juice - 1/2 cup orange juice - 1 tbl orange zest
- SWEET POTATOES: 4 tbl butter - 1/4 cup packed light-brown sugar - 2 tbl maple syrup - finely grated zest of 1 lemon - juice of 1/2 lemon - 1 tsp vanilla - 1/2 tsp ground nutmeg - 6 sweet potatoes peeled, cut into lg cubes - salt to taste
- RELISH: combine all ingred in saucepan & stir well - cook over med heat until berries pop, about 10 mins - skim foam c spoon & discard - cool to rm temp - refrig up to 3 months
- SWEET POTATOES: mix syrup ingred in small pot - swirl over lo heat until combined, about 5 mins - place sweet pots in lg pot - cover c cold water - bring to boil - reduce to a simmer & cook until pots are very tender, 15 mins - drain - mash in lg bowl drizzling syrup over - season c salt - serve hot
