Salmon & Mango
- Portioned salmon fillets.
- Cut up broccoli crowns.
- Finely chopped jalapeno pepper
- Finely chopped garlic
- Thinly sliced mango from 2 mangoes
- Thinly sliced daikon radish
- Thinly sliced ginger
- Thinly sliced shallot
- Brut champagne (I used Freixenet)
- Lime juice of 1/2 limes
- Walnut oil
- Sesame seeds
- Spices for salmon include: Jamaican curry, turmeric, powered ginger, chinese five spice, lemon grass powder.
- Preheat oven to 450.
- Place broccoli and half the daikon on the bottom of roasting pan.
- Place seasoned salmon portions on the broccoli, and cover with the rest of the ingredients.
- Pour 4-6 oz champagne
- Drizzle two tbsp walnut oil
- Squeeze the juice of half a lime.
- Cover and roast for 20-30 minutes.
- Serve over rice or with sweet yams.
