Salmon & Mango

  1. Preheat oven to 450.
  2. Place broccoli and half the daikon on the bottom of roasting pan.
  3. Place seasoned salmon portions on the broccoli, and cover with the rest of the ingredients.
  4. Pour 4-6 oz champagne
  5. Drizzle two tbsp walnut oil
  6. Squeeze the juice of half a lime.
  7. Cover and roast for 20-30 minutes.
  8. Serve over rice or with sweet yams.
