Apple Griddle Cakes

  2. 1. In a medium bowl, combine apples and lemon juice. In another medium bowl, combine flour, sugar, baking powder, cinnamon, and salt. In a small bowl, combine egg, milk, and oil. Set aside.
  3. 2. Add egg mixture all at once to flour mixture; stir just until moistened (the batter should be lumpy). Gently fold in the apple mixture.
  4. 3. Heat a lightly greased griddle or heavy skillet over medium heat until a few drops of water dance across the surface. For each pancake, pour a scant 1/4 cup of the batter onto the hot griddle; spread batter into 4-inch circle.
