Crab Cakes
- 12 crushed crackers (I've used Ritz or Club Wafers)
- 2 tablespoons mayonnaise
- 2 teaspoons Old Bay or similar seafood seasoning
- 3 tablespoons chopped fresh Italian parsley
- 1/2 diced red bell pepper
- 1/2 teaspoon prepared yellow mustard
- 1 egg, beaten
- 1 pound fresh lump Maryland crab meat, picked free of shells (you can use crab meat from elsewhere, of course, but some of the varieties from Asia available in grocery stores aren't as flavorful)
- Mix cracker crumbs, mayonnaise, Old Bay, parsley, mustard and egg. Stir in crabmeat.
- Shape mixture into patties. Broil for 10 minutes without turning or fry until golden-brown on both sides.
- Garnish with fresh lemon and additional parsley. These look nice served on a bed of lettuce.
