Indian Curried Fish Fry
- 1 medium size Pompano
- 2 Thai gren chillis
- 1/4 tsp turmeric
- 1/4 tsp salt
- 1/4 tsp cumin powder
- 4-5 mint leaves
- Small bunch of cilantro leaves
- 1 tsp ginger/garlic paste
- 1 tsp lemon juice or tamrind juice
- 1/4 tsp red chilli powder
- 2 Tbsp of semolina
- 2 Tbsp of rice flour (seasoned with a little salt and red chilli powder)
- 2-3 lemon wedges
- Rinse the fish in cold water and sprinkle the turmeric on the fish, set aside.
- Blend the green chilli, salt, cumin powder, ginger/garlic paste, lemon juice mint and cilantro to a fine paste. Apply this paste to the fish.
- Mix the rice flour and semolina together and season with red chilli powder and the salt.
- Heat Olive oil till hot, coat the fish with the rice/semolina flour and shallow fry the fish on low-medium heat till done. Do not cover the fish when frying. Fish will have a light brown coat when done. Serve the fish with lemon wedges.
