Scampi Marsala De Santa Fe
- 1 pound shrimp, peeled and deveined
- 1/2 cup butter
- 2 banana chili peppers, stemmed, seeded and julienned (cut into thin strips)
- 4 cloves garlic, minced
- 1 Tbs. dried Italian herbs
- 1/2 cup Marsala wine
- 1/2 cup grated Parmesan cheese
- angle hair pasta, cooked al dente
- Rinse the shrimp under cold running water and pat dry.
- Into a medium saute pan or skillet, heat the butter over medium heat. Add the shrimp and saute 5 minutes.
- Into the pan add the banana peppers, garlic and dried herbs and saute 2 minutes.
- Add the Marsala wine and the Parmesan cheese and cook 2 minutes, stirring while the cheese melts.
- Spoon over some angel hair pasta and serve.
