Pumpkin Spice Kookies

  1. preheat oven to 365. In a large mixing bowl, cream the shortening and sugar. Blend in the pumpkin, making sure to smooth out any lumps as much as possible, then blend in the eggs and vanilla. In a separate bowl, mix together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, orange peel, ground cloves, and ginger. Pour half of the mixed dry ingredients from this bowl into the pumpkin mixture and fold together. Continue to add dry ingredients to the wet until completely incorporated. Add walnuts and raisins, if desired. Dough can be rolled into a tube shape in plastic wrap and frozen for slicing uniform cookies or dropped by spoonfuls onto an ungreased cookie sheet for a muffin or scone-like cookie. Bake 9-11 minutes at 365 or until bottoms start to appear golden brown. Cool for 1 minute, push each cookie on the sheet to avoid further sticking and continue to cool on sheet for at least 2-3 minutes more before stacking or serving.
