Grilled Cherry Tomato Turkey Burgers
- 2 Tbsp. dijon mustard
- 2 Tbsp. panko bread crumbs
- 2 Tbsp. fat-free milk
- 2 cloves garlic, minced
- 1 shallot, finely chopped (2 Tbsp.)
- 1 Tbsp. chopped basil
- 1/2 tsp. salt
- 1/2 tsp. ground pepper
- 1 lb. uncooked ground turkey
- 1 pint assorted cherry tomatoes
- rolls or focaccia bread
- 1 tsp. lemon juice
- Combine 1 Tbsp. mustard with bread crumbs, milk, garlic, shallot, basil and 1/4 tsp. salt and pepper. Add turkey and mix well. Form into four patties.
- Brush tomatoes with olive oil; roast tomatoes at 400 degrees for 20 minutes while burgers cook in a grill pan.
- Spread remaining mustard on the bread, top with burgers and roasted tomatoes. Sprinkle with a few fresh basil leaves and lemon juice, as well as remaining salt and pepper.
