Mom'S Chicken Pot Pie(Anita'S Favorite Dinner)
- 1 small whole chicken, excess skin removed
- 2 pieces celery, chopped
- 1 small onion, chopped (optional)
- 2 carrots, chopped
- 4 to 5 potatoes
- 1 can chicken broth (reduced salt)
- fresh parsley, chopped
- seasonings (I use either small amounts of fresh dill or sweet basil)
- salt and pepper to taste
- 4 large eggs, beaten (I use egg substitutes to lower fat)
- 1/2 pt. fat free sour cream
- 1 tsp. salt
- 2 c. flour (more as needed when mixing dough depending on egg size)
- Beat eggs; add sour cream and salt.
- (I use a mixer with dough hooks.)
- Gradually add flour to egg mixture.
- Dough should be kneaded until it is not sticky.
- Add flour until dough is soft, but not too dry.
- Roll dough and cut into desired size pieces.
- I cut the dough in long strips and then cut in squares into the pot. Drop in boiling broth/vegetable mixture until dough floats to top, then simmer for 5 minutes or so.
- The excess flour will thicken the broth slightly.
