Vegan Mango Banana Nut Loaf
- 1 cups whole wheat pastry flour
- 1 cup coconut flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons powdered cardamom
- 1/4 teaspoon salt
- 1 tea cinnamon
- 1/2 c crushed pecans
- 1/2 c crushed almonds
- 1/2 c oats
- 1/4 c chia seeds
- 1/4 c vegetable or coconut oil
- 3/4 cup sugar (or alrernative)
- 2 flax egg
- 2 cups mango pulp
- 2 over ripe banana
- 2 tbl vanilla
- 1/4 soymilk
- 1. Preheat oven to 350F. Line and grease a loaf pan with parchment paper and set aside.
- 2. In a large bowl whisk together flours, baking soda, baking powder, cinnamon, cardamom powder and salt. Add nuts, seeds and oats.
- 3. In another bowl beat together the oil, milk, flax egg, vanilla, sugar and mango pulp.
- 4. Add dry ingredients to wet and mix well.
- 5. Transfer the batter to the loaf pan and bake for 50-55 minutes or until a toothpick inserted comes out clean.
