Coconut Surprise Cake
- 2 1/4 c. sifted flour
- 3 Tbsp. baking powder
- 1 tsp. salt
- 1 1/2 c. sugar
- 2/3 c. shortening
- 1/2 c. milk
- 3 eggs
- 1/2 c. milk
- 1 1/2 tsp. vanilla
- 1 recipe 7-Minute Frosting
- 2 bananas, sliced
- freshly ground coconut or pkg. coconut
- Sift flour, baking powder and salt together.
- Combine sugar, shortening and 1/2 cup milk in mixer bowl.
- Beat at medium speed for 5 minutes.
- Add eggs, 1/2 cup milk and vanilla.
- Beat 10 minutes.
- Pour into 2 greased 9-inch pans.
- Bake at 350u0b0 for 30 to 35 minutes or until layers test done.
- Cool in pans for several minutes.
- Remove from wire rack to cool completely.
- Spread 7-Minute Frosting over 1 cake layer.
- Arrange banana slices over frosting.
- Add second layer of cake.
- Spread 7-Minute Frosting over top and sides of cake.
- Sprinkle with coconut.
- Yields 12 servings.
