Cranberry Nut Bread(Low-Fat)
- 2 c. all-purpose flour
- 2 c. whole wheat flour
- 1 1/2 c. sugar
- 3 tsp. baking powder
- 1 tsp. baking soda
- 1 1/2 tsp. salt
- 1/2 c. applesauce
- 1 1/2 c. orange juice
- 2 Tbsp. grated orange rind
- 4 egg whites
- 1/4 c. chopped nuts
- 2 c. chopped cranberries
- Preheat oven to 350u0b0.
- Lightly oil 2 large loaf pans (9 x 5-inch).
- In a large bowl, combine the first 6 ingredients.
- In medium bowl, combine next 6 ingredients.
- Using as few strokes as possible, stir liquid batter into dry batter, just until batters are combined.
- Spread into pans.
- Bake for 50 to 60 minutes.
- Cool 10 minutes in pan.
- Remove from pan.
- Cool completely.
- Wrap airtight.
- May be frozen.
