Manicotti Cheese Bake
- 1/2 lb. ground beef
- 1/2 c. minced onion
- 1/4 c. chopped green pepper
- 2/3 c. tomato paste (6 oz.)
- 2 c. water
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 eggs, slightly beaten
- 1 tsp. sugar
- 1 1/2 tsp. Italian seasoning
- 8 to 9 manicotti shells (1 pkg.)
- 2 c. Ricotta cheese or cottage cheese (1 lb.)
- 2 c. shredded Mozzarella cheese (8 oz.)
- 1/2 c. grated Parmesan cheese
- 1 Tbsp. chopped parsley
- Saute meat, onion and green pepper.
- Drain off fat.
- Add paste, water, salt, pepper, sugar and seasoning.
- Simmer 15 minutes.
- Parboil shells in salted water, approximately 6 minutes. Drain on paper towel.
- Fill shells with combined Ricotta (or cottage), Mozzarella and Parmesan cheeses and parsley.
- Place shells in shallow baking dish.
- Cover with sauce.
- Bake in a 350u0b0 oven for 20 to 30 minutes.
