Caribbean Meatballs
- 1.33 lb ground turkey meat or half turkey half bison.
- 1/2 cup minced pinapple
- 1/4 cup cupminced roasted bell pepper
- 1/4 cup carmelized minced purple onion
- 1/2 tsp sage (or thyme if you don't have sage)
- 1/2 tsp curry
- 1/2 tsp honduran allspice
- sea salt
- pepper
- 1-2 habeneros seeded and finely minced
- 2 cups crushed kix cereal
- 1-2 eggs beaten
- optional SAUCE:
- coconut milk
- turkey stolk
- flour :arrowroot or tapioca, cornstarch, or peach palm
- lemon grass
- tomato paste
- sea salt and pepper
- combine all meatball ingredients in a bowl knead with hands till thoughly mixed. form into mini or regular sized balls.
- put meatballs in sauce boiling in a sauce pan.
- or slowly cook in a crock pot.
- you can bake or fry meat balls and make the sauce separely too if you want.
