Orange Crunch Muffins
- 2 teaspoons grated orange peel
- 1/4 cup sugar
- 1/4 teaspoon water
- 1-1/3 cups flour
- 3 tablespoons sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 each egg -- well beaten
- 3 tablespoons butter or margarine -- melted
- 1 cup milk
- 3/4 cup Grapenuts
- Grease muffin cups well. Preheat oven 400* F.
- In small bowl, combine orange rind, 1/4 cup sugar and water to make crumbly topping. Set aside.
- Mix flour with 3 tablespoons sugar, baking powder, and salt in medium bowl. Combine beaten egg and milk. Add to flour mixture with butter. Mix enough only to moisten. Fold in cereal.
- Fill prepared muffin pans about 2/3 full. Sprinkle with topping.
- Bake at 400*F for 15-20 minutes or until golden brown.
