Orange Crunch Muffins

  1. Grease muffin cups well. Preheat oven 400* F.
  2. In small bowl, combine orange rind, 1/4 cup sugar and water to make crumbly topping. Set aside.
  3. Mix flour with 3 tablespoons sugar, baking powder, and salt in medium bowl. Combine beaten egg and milk. Add to flour mixture with butter. Mix enough only to moisten. Fold in cereal.
  4. Fill prepared muffin pans about 2/3 full. Sprinkle with topping.
  5. Bake at 400*F for 15-20 minutes or until golden brown.
