Enchilada Stack
- 1 lb. ground beef
- 1 (17.5 oz.) jar enchilada sauce
- 6 (10-inch) flour tortillas
- 2 c. shredded Cheddar cheese
- 1 can refried beans
- 2 cans chopped green chilies, drained
- Cook ground beef over medium-high heat until browned.
- Pour off fat.
- Add 1/2 cup enchilada sauce.
- Spray baking sheet with cooking spray.
- Place 1 tortilla on sheet, then top with 1/3 of meat mixture and 1/4 cup of cheese.
- Top with 1 tortilla, 1/2 of refried beans, 1/2 enchilada sauce, 1 can chilies and 1/4 cup cheese.
- Repeat all layers.
- Top with 1 tortilla, remaining meat mixture and 1/4 cup cheese.
- Top with remaining tortilla.
- Cover with foil.
- Bake at 400u0b0 for 40 minutes or until hot.
- Uncover; top with remaining enchilada sauce and cheese.
- Bake 5 minutes. Cut into wedges.
- Serves 8.
