Christmas Fruit Cookies(My Favorites)
- 1 c. brown sugar
- 1 stick butter
- 2 eggs, well beaten
- 1/2 tsp. soda, dissolved in 1 1/2 tsp. milk
- 1 1/2 c. flour
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1/4 cloves
- dash of salt
- 1/2 lb. candied cherries
- 1/2 lb. candied pineapple
- 1 lb. white raisins
- 1 lb. pecans, chopped
- Cream together brown sugar, butter, eggs and soda mixture. Sift together three times flour, nutmeg, cinnamon, cloves and salt.
- Chop and mix with dry ingredients cherries, pineapple, raisins and pecans.
- Mix in the butter and sugar, then add 1/2 cup orange juice (frozen) and mix with hands.
- Bake 20 minutes at 300u0b0.
- It is a good substitute for fruit cake and much easier to make.
- Store in airtight container for a week.
