Sweet Potato Fruit Salad
- 3 medium sweet potatoes (about 1 lb.)
- 2 oranges
- 1/2 c. seedless grapes, halved
- 1/3 c. light raisins
- 1/4 c. thinly sliced celery
- 1/4 c. broken walnuts
- 1 (3 oz.) pkg. cream cheese, softened
- 2 Tbsp. honey
- 2 to 4 Tbsp. orange juice
- Scrub potatoes; cut off any woody portions and ends.
- Cook in boiling water for 25 minutes, or just until tender; cool.
- Peel and cut into 3/4-inch cubes.
- Finely shred 1 teaspoon orange peel and set aside.
- Peel and section oranges.
- Place oranges in a large bowl.
- Add potatoes, grapes, raisins, celery and nuts.
- In a small bowl combine orange peel, cream cheese and honey until smooth; stir in 2 tablespoons orange juice.
- Pour over mixture and toss to coat. Cover and chill.
