Sweet Potato Fruit Salad

  1. Scrub potatoes; cut off any woody portions and ends.
  2. Cook in boiling water for 25 minutes, or just until tender; cool.
  3. Peel and cut into 3/4-inch cubes.
  4. Finely shred 1 teaspoon orange peel and set aside.
  5. Peel and section oranges.
  6. Place oranges in a large bowl.
  7. Add potatoes, grapes, raisins, celery and nuts.
  8. In a small bowl combine orange peel, cream cheese and honey until smooth; stir in 2 tablespoons orange juice.
  9. Pour over mixture and toss to coat. Cover and chill.
