Chicken Creole
- 4-Chicken Breasts chopped
- 2C Chicken Stock (or chicken broth)
- 2Tbl olive oil
- 2C Chopped onion
- 1C chopped bell pepper
- 2 pounds fresh or canned tomatoes chopped
- 1C chopped fresh parsley
- 2Tbl soy sauce
- 1C chopped green onion
- 1/2tbl spoon ground cayenne pepper
- 1tsp crushed dried mint
- Salt pepper to taste
- 1Tbl minced garlic
- 1C dry white wine
- Heat oil in large high walled skillet over medium high heat. Saute the onions, bell pepper, parsley, and green onions until the onions are clear. Then add mint, garlic, wine and stock. Stir in the tomatoes and soy sauce; bring to a boil. Add the chicken salt and pepper, and bring back to a boil. Turn the heat to low and simmer for at least an hour stirring occasionally.
