Herb & Lemon Navy Beans
- 1 can Navy (aka Canellini) beans
- Various fresh herbs - e.g. thyme, rosemary, oregano - very finely chopped
- Minced garlic
- 1 tablespoon finely diced red onion
- 1 tablespoon Italian (flat leaf) parsley
- Tuna (optional)
- Juice of half a lemon
- Olive oil
- Drain and rinse the beans well. Pour into a bowl and add onions, lemon juice, salt, pepper. Mix gently.
- In a small pan over the lowest heat, warm up a few tablespoons of olive oil to which you have added the fresh herbs (except for the parsley) and the garlic. 10 minutes or so should be fine - the oil should never get hot. Allow the oil & herbs to cool a little then add to the beans, mix gently. You can add the coarsely chopped parsley either at this point or just before eating. If you wish you can add a small can of tuna.
- Leave the beans to rest for an hour or so in the fridge (the longer the better).
