Turkey Burgers
- 1 lb. ground turkey
- 1/2 cup fresh bread crumbs
- 1/3 cup chopped flat leaf parsley
- 1 egg lightly beaten
- % tsp salt
- 1/2 tsp freshly ground black pepper
- 1 tbsp safflower oil
- 1 small onion finely chopped
- 1 small clove garlic minced
- 4 toasted hamburger rolls
- 1. In a medium bowl mix the ground turkey with the bread crumbs, parsley, egg,
- salt and pepper. Cover and refrigerate.
- 2. Light the grill. Heat oil in a small skillet. Add onion and cook over high heat
- until beginning to brown, 3 to 4 minutes. Stir in the garlic and remove from heat. Let cool
- to room temperature, then stir into turkey mixture.
- 3. Form turkey into 4 patties. Cook the patties on an oiled grill for about 6 minutes
- per side, or until an internal temp of 145 is reached. Serve the burgers on the buns.
- Fresh plum Sauce with Basil
- 1 '/2 lb. ripe purple plums pitted and cut into 1 inch chunks
- 1/3 cup balsamic Vinegar
- 1/2 cup shredded fresh basil
- '/2 tsp freshly ground black pepper
- M: tsp salt
- 1. In a medium non-reactive saucepan bring the plum s and Vinegar to a boil over
- high heat. Cover and reduce the heat to moderately low. Cook the plums stirring often,
- until tender, about 10 minutes.
- 2. Puree the plums in a food processor. Strain the puree into a non-reactiVe bowl.
- Stir in the basil, pepper, and salt and let cool. Use or cover tightly and refrigerate up to 1
- week.
