Chai Tea, Cardamom And Fresh Apple Cake
- 3 cups all-purpose flour
- 3 1/2 tsp baking powder
- 1/2 tsp kosher salt
- 2 tsp ground cinnamon
- 2 tsp Chinese five spice
- 2 tsp ground cardamom
- 2 cup granulated sugar
- 1/2 cup light brown sugar
- 1/3 cup chai tea, (such as oregon) or 1/3 cup milk
- Seeds scraped from one vanilla bean (optional)
- 1 tsp pure vanilla extract if using vanilla bean or 1 Tbsp extract if not using bean
- 4 large eggs
- 3/4 cup canola oil
- 2 medium Granny smith apples, about 3 cups, peeled, cut in 1/4 inch dice
- 1 cup course chopped pecans
- powdered sugar
- Preheat oven to 350 degrees. Grease and flour a 12-cup bundt pan.
- In a medium bowl whisk together the first 6 ingredients (four through cardamom), set aside.
- In a large bowl mix together granulated and brown sugars, chai tea, vanilla beans, vanilla, eggs and canola oil. Add 1/8 cup flour mixture to a small bowl, add pecans, toss to coat. Add flour mixture to egg mixture and stir just until combine. Fold in pecans and apples. Pour batter into prepared pan and bake for about 1 hour and 20 minutes or until tester inserted comes out clean.
- Cool cake in pan on cool rack for 15 minutes. Turn out of pan on cooling rack cool completly. Dust with powdered sugar to serve.
