Chai Tea, Cardamom And Fresh Apple Cake

  1. Preheat oven to 350 degrees. Grease and flour a 12-cup bundt pan.
  2. In a medium bowl whisk together the first 6 ingredients (four through cardamom), set aside.
  3. In a large bowl mix together granulated and brown sugars, chai tea, vanilla beans, vanilla, eggs and canola oil. Add 1/8 cup flour mixture to a small bowl, add pecans, toss to coat. Add flour mixture to egg mixture and stir just until combine. Fold in pecans and apples. Pour batter into prepared pan and bake for about 1 hour and 20 minutes or until tester inserted comes out clean.
  4. Cool cake in pan on cool rack for 15 minutes. Turn out of pan on cooling rack cool completly. Dust with powdered sugar to serve.
