Jill'S Special Salmon Grill
- 4 medium to large salmon steaks
- 4 cups of double strength brewed French Roast coffee (4 T per cup brewed, completely cooled
- 4-8 T honey
- fresh chives, chopped medium
- sea salt
- pepper
- Lightly salt and pepper fish and refrigerate
- Reduce coffee in a saute pan until reduced by half
- Add 1-2 T honey per salmon steak, reduce by a third, cool completely
- Once completely cool, rub marinade into steaks with fingertips, being careful not to bruise the fish but working the marinade into the flesh. Be sure to reserve approximately 2 T of marinade for drizzle at service.
- Oil hot grill (or use a grill pan) and place steaks on grill
- Grill Salmon until properly cooked on both sides, being careful to not let fish stick to grill.
- Heat remaining marinade in saute pan until lightly simmering, add 1/2 of fresh chopped chives, simmer for 3-5 minutes
- Remove steaks from grill, lightly drizzle heated marinade over steaks, sprinkle with remaining fresh chopped chives and serve immediately!
