Jill'S Special Salmon Grill

  1. Lightly salt and pepper fish and refrigerate
  2. Reduce coffee in a saute pan until reduced by half
  3. Add 1-2 T honey per salmon steak, reduce by a third, cool completely
  4. Once completely cool, rub marinade into steaks with fingertips, being careful not to bruise the fish but working the marinade into the flesh. Be sure to reserve approximately 2 T of marinade for drizzle at service.
  5. Oil hot grill (or use a grill pan) and place steaks on grill
  6. Grill Salmon until properly cooked on both sides, being careful to not let fish stick to grill.
  7. Heat remaining marinade in saute pan until lightly simmering, add 1/2 of fresh chopped chives, simmer for 3-5 minutes
  8. Remove steaks from grill, lightly drizzle heated marinade over steaks, sprinkle with remaining fresh chopped chives and serve immediately!
